Following up to myself...
$(file) was my friend here, especially /usr/share/magic, it has a nice
"description" of the level fields in a JVT/NAL sequence.
Poked one byte (offset 7, 51->41) in the file and now it works, x264
encoded material on the Playstation 3 :-)
