Thanks for the suggestion. I'd still lie to know why -f concat didn't 
work in ffmpeg, but I did use sox as a workaround.

sox 01/01*wav  -t wav  - |
    ffmpeg -i - -vn -c:a libfdk_aac \
    -profile:a aac_he -b:a 48k -ac 1 -signaling implicit \
    01.m4a

Worked like a charm.
