In most cases, they can't. Whenever they try to hit-and-run, they can't
wait 5 minutes and retry. And if they try from a different host, then
the greylisting will still block (it matches the triplet
sender_address/sending_host/destination_address, so if you change the
host you're still greylisted. Incidentally, that's another problem of
greylisting : it can delay a lot mail sent from a pool of server if the
sending server keep changing).
