i remember a lot of discussion, about the resolution that could "describe"
vhs..

basically, vhs surely doesn't have the highest resolution. people argument
between 320x240 and 640x480.

well, you could run some test-captures with different resolutions and
compare for yourself.

in general i would maybe use 640x480, capture in mpeg1 or huffyuff and use
some noisefilters on the capture.avi, rescale to a smaller resolution and
keep the result.

if the material is not that important, i might capture to any smaller res.
right away.

what really seems very strange to me is that video doesn't exeed a certain
filesize at full resolution, since my experience with xvid and vhs sources
is that you get unbelievable large files caused by all the noise..

and for getting into xvid.. i rarely used it under linux, since encoding is
way more comfortable with windows (sadly..). this guide
http://www.doom9.org/xvid-vdub-final.htm might give you some nice insights
into the different xvid-options and what they actually do.

..and here is a thread over at doom9's forum that should give you some good
ideas on switches for xvid under linux, 1 or 2 pass and how to do it and so
on.

surely youhave to install xvid and recompile mplayer with xvid-support.

have fun!,
