I think you have a lot of doc reading ahead of you
http://mplayerhq.hu/DOCS/HTML/en/index.html has plenty of explanation for this process.

Mplayer/mencoder is not just a one-click straightforward solution, nor is video encoding in any form for that matter.

PS. avi is a container format, while mpeg4 is a codec standard.
