How about:

mplayer <source> -dumpfile <streamfile> -dumpstream </dev/null 
 >/dev/null 2>&1 &

mplayer <streamfile>

The above seems to work if you give the first command a good headstart

Or more robust:

mkfifo dumpfifo

cat dumpfifo | tee <dumpedstreamfile> | mplayer - &

mplayer <source> -dumpfile dumpfifo -dumpstream
