Look at NVrec from Justin Schoeman which does a really good job of
this.  His capture code even resamples audio if actual delivered sample
rate from the audio board isn't exactly the advertised rate.  This keeps
AV sync rock-solid for hours.

We could do way worse than using his code for v4l/v4l2 capture in mplayer.
